Simple and Healthy Chicken Salad

  • 2 ½ lbs chicken breast
  • 1 ¼ cup chicken broth
  • 1 ¼ cup red grapes
  • ½ cup plain nonfat Greek Yogurt
  • ½ cup mayonnaise
  • 1 Tbsp raw honey
  • 1 ½ Tbsp Dijon mustard
  • 2 Tbsp lemon juice
  • ½ cup slivered almonds
  • 2 Tbsp fresh chopped parsley
  • Salt and pepper to taste



  1. Slow cook chicken breast and broth on high for 3-4 hours in a crockpot.
  2. Once chicken is cooked, shred and allow to cool.
  3. Slice grapes into quarters.
  4. Mix yogurt, mayonnaise, mustard, lemon juice, and honey until all ingredients are combined.
  5. Add almonds and grapes to cooled, shredded chicken.
  6. Pour your dressing mixture over chicken.
  7. Add parsley to salad.
  8. Mix well.

Enjoy as-is or make a wrap using a low-carb tortilla!
