Easy Ham Quesadilla

Looking for a delicious lunch or dinner to go with your 15 Day Challenge? This recipe is easy and quick to make, and it offers a nice alternative to eating out!

Cook Time

Varies (usually a couple of minutes)


  • Brush
  • Skillet
  • Stovetop
  • Knife
  • (4) Plates




  • 1 1⁄2 cups shredded Monterey Jack cheese
  • 4 large flour tortillas (10-inch)
  • 1 cup smoked ham
  • 1⁄2 cup finely diced green bell pepper
  • 2 tablespoons olive oil
  • 1⁄2 cup light sour cream for serving (Optional)


  • Sprinkle half of the cheese over half of each tortilla; top with ham and green pepper.
  • Sprinkle with remaining cheese.
  • Fold each tortilla over to enclose filling.
  • Brush 1 tablespoon oil in the bottom of large skillet set over medium heat; cook quesadillas.
  • Lastly, cut into 3 or 4 wedges.
  • Optional: Serve with slices of pickled Jalapenos and/or light sour cream for dipping.
  • ENJOY!
