Easy Bulgogi Bowl - Meal Prep

- 2 lb. 90/10 Lean Ground Beef
- 2 - Cups Brown Rice
- 4 - Bell Peppers
- 1 - Sweet Onion
- Sliced Carrots
- Olive Oil
- Korean Barbeque Sauce (Bought or Prepared)

- Sliced Cucumber
- Kimchi
- Sesame Seeds
- Chives or Spring Onions
Pour rice into a medium saucepan and rinse to remove excess starch.
Add 4 cups water and 2 tsp. olive oil to saucepan.
Bring rice to a boil, then reduce heat and cover. Let simmer for 45 minutes or until rice is tender.
Dice bell peppers and sweet onion.
Drizzle a large pan with olive oil. Place over medium-high heat, then add the peppers and onions. Sauté until softened but not browned.
Add ground beef to softened vegetables. Cook until browned.
Drain any excess fat and return pan to burner.
Add sliced carrots and Korean barbecue sauce to taste. Stir to combine.
Remove vegetable and beef mixture from heat.
Spoon cooked rice into bowls, followed by beef and vegetable mixture. Enjoy!
Optional: Serve with sliced cucumber and kimchi or garnish with chopped scallions and sesame seeds.
